This happens on demo each time; on my local instance, PDF is generated instantly.

Digging a bit, I do not understand what's wrong, but I least found what's wrong: the logo from PDF models.
It defaults to the logo URL of the application, http://demo.galette.eu/logo in that case. If I change it to https://galette.eu/site/assets/img/galette.png for example, PDF generation works like a charm. I do not remember I saw this issue above; but I can also replicate on 0.9 demo :(
